Ingredients

  • 1 sheet ready-to-roll puff pastry
  • 3 tbsp. green pesto
  • 1 zucchini (sliced)
  • 1 red onion (sliced)
  • 2 peppers (sliced)
  • Handful cherry tomatoes (halved)
  • 1/5 lb low-fat feta cheese
  • Pinch chili flakes (optional)

Instructions

Preheat the oven to 350F.

Roll out the pastry onto a lined baking tray. Fold up the edges to create a 1-inch border, then spread the pesto evenly in the middle.

Layer the sliced vegetables onto the pastry, spacing them out evenly. Then crumble the feta over the top.

3.

Sprinkle with salt, black pepper, and chili flakes (if using). Bake in the oven for 20 minutes or so until the pastry is golden and crisp.

4.

Finish with fresh parsley, slice into quarters, and serve.
