Nourishing Gut Health Soup

Looking for a tasty, satisfying meal that will boost your gut health? This simple, nourishing soup is one to add to your recipe book. Ideal for winter lunches or a satiating afternoon snack, it’ll warm you from the inside out.

All-in-all, a totally delicious way to get some veggies and all-important fibre into your diet.

Servings:  1

Ingredients

  • 1can cannellini beans
  • 2 carrots
  • 2 celery sticks
  • 1 white onion
  • 2 cloves garlic
  • Handful bay leaves
  • 50g pasta (choose your favourite)
  • 1tbsp. white miso
  • 2handfuls spinach
  • 500ml hot water

Instructions

  1. In a pan, add the diced carrots and celery and cook for a few minutes to soften.

  2. Next, add the onion and garlic and cook for a further few minutes.

  3. Now add the beans, stock, bay leaves, and pasta. Cook until the pasta is soft.

  4. Just at the end, add the miso and spinach leaves and allow to cook for 1 minute (until the spinach is wilted).

  5. Serve up and get spoonin’.
