A rich, nutty spin on a classic. It’s got everything that makes regular chicken curry so great, but it’s improved with a big dollop of crunchy peanut butter. Who knew such a simple addition could make such a difference?

You can use any cut of chicken you like ­— thigh, leg, or leftovers from a roast — but in this recipe we’ve gone for succulent chicken breast cut into bitesize cubes.

Variations and Add-Ins

  • Turn up, or down, the heat. This recipe contains one chilli, so chuck in a couple more if you like it hot. Of course, if you prefer a milder curry, add less or leave out entirely.
  • Go plant-based. Substitute the chicken with seitan or tofu to make it a vegan-friendly recipe.
  • Increase the protein and lower the calories by replacing rice with quinoa.

Tips for Making the Best Peanut Butter Chicken Curry

  • Don’t worry too much if the chicken pieces get stuck to the bottom of the pan while frying. Add a drop of coconut milk to help scrape the pieces free, and give the sauce a flavour boost in the process.
  • Get all the ingredients ready beforehand. The sauce for the curry cooks quite quickly, so don’t be caught off guard while prepping or measuring ingredients.

What to Serve With This Dish

  • Serve with some greens like roasted broccoli or beans for some extra nutrients.
  • Naan bread or flatbread is great for scooping up any remaining sauce.

Ingredients

  • 1 tbsp. coconut milk
  • 400 g chicken breast (cubed)
  • 1 onion (sliced)
  • 2 garlic cloves (finely chopped)
  • 1 thumb-size ginger (finely chopped)
  • 1 red chilli (de-seeded and finely chopped)
  • 5 tbsp. curry powder
  • 1 tin chopped tomatoes
  • 1 handful fresh coriander (chopped)
  • 400 ml light coconut milk
  • 100 g all-natural peanut butter (crunchy)

Instructions

First, heat the coconut oil in a large pan and add the chicken. Season lightly and fry until cooked through and golden brown on the outside, then set aside.

Now, add the onion and fry until soft. Add the chopped garlic, ginger, and chilli and fry for another 1-2 minutes before adding the curry powder and a large splash of water. Bring to a simmer, stir well, and cook for 5 minutes.

Add the chopped tomatoes and coriander, give it a good stir and leave to simmer for another 10 minutes, stirring occasionally.

Gradually stir in the light coconut milk to the sauce and then add your crunchy peanut butter. Give it another really good stir and leave to simmer on a low heat until your desired consistency.

Serve with a sprinkling of chopped coriander and peanuts, some steamed rice or flatbread, and enjoy!
