Ingredients

  • Pickles Ingredients:
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2 tbsp brown sugar
  • 1 cup sliced veggies (we used carrot, onion, and cucumber)
  • Dressing and Assembly Ingredients:
  • Juice of half a lemon
  • 3 tbsp olive oil
  • 2 tbsp Greek yogurt
  • salt + pepper to taste
  • 1 avocado, mashed
  • 3 oz Goat cheese
  • cucumber (desired amount)
  • tomato (desired amount)
  • mixed greens (desired amount)
  • sprouts (desired amount)
  • 2 slices of your bread of choice

Instructions

1.

To make the brine for your pickles, bring the vinegar, water, and brown sugar to a boil in a saucepan. Meanwhile, pack the sliced vegetables into jars.

Pour the brine you just made over your vegetables. Cover and chill until cool. Pickles can be done 2 weeks ahead. Keep chilled.

3.

Whisk the lemon juice, olive oil, Greek yogurt, salt, and pepper to make a dressing.
Add your mixed greens to the dressing and toss to coat.

4.

Spread the mashed avocado and goat cheese onto two slices of bread.

5.

Arrange the lettuce, cucumber, sprouts, tomato, and pickled veggies and close your sandwich. Enjoy!
