Ingredients
- 1/3 cup oat flour
- 1 scoop Myprotein Soy Protein Isolate (sub with other vegan/whey protein OR extra flour + 1 tbsp sweetener)
- 1 tbsp + 1 tsp + 1 tsp liquid sweetener
- 1 tbsp nut butter
- 2 tbsp + 2 tbsp soy/Greek yogurt
- 1/4 cup blueberries (microwaved till softened)
- 1 tbsp plant/dairy milk
- 1 tbsp cocoa powder
- 1 + 1/3 tbsp boiling water
Instructions
Mix the oat flour and protein powder together. Add in 2 tbsp of yogurt, 1 tbsp of liquid sweetener, and the nut butter. Gradually add in milk if it’s too dry until a crumbly dough forms.
Pour the dough into a ramekin and use the back of a spoon to press down until you form a shortbread crust.
Mix 2 tbsp of yogurt with the blueberries and 1 tsp of liquid sweetener. Spread on top of shortbread crust.
Mix cocoa powder, 1 tsp liquid sweetener, and boiling water together till you form a spreadable paste.
Spread above yogurt. Refrigerate for 3-4 hours or overnight before serving!
