This honey popcorn chicken recipe needs to be shouted about. The dipping sauce alone deserves a medal. Trust me on that.

If you’re in the mood for a savoury snack that’s packed with protein, coated in crispy deliciousness, and dipped in sweet ‘n’ spicy sauce… then this is it. You absolutely need these little chicken bites in your life.

Top tip: this recipe technically serves five people, but if you’re anything like me, you’re going to want to make this with a maximum of two other people around just so you don’t have to give away too many. You have been warned.

Serves 5

Ingredients

  • 500 g chicken mince
  • 1/2 tsp. cayenne pepper
  • Pinch salt
  • 100 g powdered oats
  • 2 eggs (lightly beaten)
  • 60 g panko breadcrumbs
  • 3 tbsp. olive oil
  • 2 tbsp. parsley (finely chopped)
  • Parmesan cheese (optional)
  • Truffle oil (optional)

Instructions

1.

First, preheat the oven to 220C/425F.

Prepare a wire rack by spraying with olive oil or use a baking tray lined with baking paper.  

3.

Place the chicken mince in a bowl and season with salt and pepper to taste. Mix and form into bite-sized balls with your hands. 

4.

Now dip each chicken ball into the oat flour, followed by the beaten egg, and finally the panko breadcrumbs. Make sure each one is fully coated, then transfer to your prepared wire rack or baking tray. 

5.

Sprinkle with a little more salt if you wish, then drizzle with olive oil and bake in the oven for 20-25 minutes until golden and crispy. Turn the balls halfway through to get an even bake.

Meanwhile, combine all the ingredients for the sauce in a small bowl and set aside. 

7.

Remove the chicken bites from the oven, garnish with fresh chopped parsley and top with a little parmesan and a drizzle of truffle oil if you’re feeling really extra. 

8.

Serve immediately with the dipping sauce. Sharing is encouraged, but not compulsory.
